Greek Chicken Souvlaki Bowl

Ingredients

  • 7 pieces Yukon potatoes small
  • 0.333 cup Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1.5 tsp Dried oregano
  • 6 pieces Garlic cloves peeled
  • 1.5 lemons Lemon juice
  • 1.5 lemons Lemon juice
  • 0.25 cup Olive oil
  • 4 pieces Garlic cloves minced
  • 0.25 cup Parsley chopped
  • 2 tbsp Fresh oregano chopped
  • 0.5 tsp Cumin powder
  • 0.5 tsp Chili flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 pieces Chicken breasts cubed
  • 2 tbsp Olive oil
  • 1.5 cups Plain Greek yogurt
  • 0.5 English cucumber grated
  • 3 pieces Garlic cloves minced
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 pieces Tomato chopped
  • 1 piece Cucumber chopped
  • 0.5 piece Red onion sliced
  • 4 cups Mixed greens
  • 0.5 cup Feta cheese
  • 0 Greek vinaigrette to taste

Instructions

  1. Quarter the small Yukon potatoes. Preheat the oven to 400°F.
  2. Add olive oil, salt, pepper, dried oregano, garlic cloves, and lemon juice to the potatoes in a roasting pan
  3. Roast the potatoes in the oven for 35-45 minutes until edges are golden brown.
  4. Prepare the chicken marinade by combining lemon juice, olive oil, minced garlic, chopped parsley, fresh oregano, cumin powder, chili flakes, salt, and pepper.
  5. Cube the chicken breasts into 1-inch pieces and combine with the marinade. Marinate in the refrigerator for at least 30 minutes.
  6. Preheat an outdoor grill or grill pan and drizzle with olive oil. Thread marinated chicken onto skewers.
  7. Grill the chicken skewers for 8-10 minutes, turning frequently until cooked through and reach an internal temperature of 165°F.
  8. Prepare the tzatziki by grating the cucumber and squeezing out excess water. Mix with Greek yogurt, garlic, olive oil, red wine vinegar, salt, and pepper.
  9. Prepare a simple salad with chopped tomatoes, cucumber, and red onion. Serve over a bed of mixed greens.
  10. Assemble the Greek bowl with a bed of mixed greens, roasted potatoes, grilled chicken skewers, salad, a dollop of tzatziki, and sprinkle of feta cheese. Finish with a Greek vinaigrette for added flavor.
