Summer Watermelon Salad
Refreshing watermelon salad with basil, mint, feta cheese, and a vinaigrette, perfect for summer cookouts.

Ingredients
- 1 whole watermelon cubed
- 0.5 whole red onion thinly sliced
- 1 whole cucumber thinly sliced
- 0.5 cup basil thinly sliced as ribbons
- 0.25 cup mint thinly sliced as ribbons
- 0.5 cup feta cheese crumbled
- 2 tablespoons red wine vinegar
- 3 tablespoons extra virgin olive oil
- 0 black pepper to taste
- 0 salt to taste
- 1 teaspoon lime zest
- 1 tablespoon lime juice
Instructions
- Cut the watermelon into cubes by first shaving down the sides, then cutting it horizontally, vertically, rotating, and slicing vertically again. Place the watermelon cubes into a large bowl.
- Thinly slice the red onion and cucumber. Roll up the basil and mint leaves and cut them into thin ribbons.
- Add the red onion, cucumber, basil, and mint ribbons to the bowl with the watermelon cubes.
- Crumble the feta cheese over the salad.
- Make a simple vinaigrette by mixing red wine vinegar, extra virgin olive oil, lots of black pepper, salt, lime zest, and lime juice. Pour the vinaigrette over the salad and toss gently.
- Garnish the salad with additional basil and mint ribbons if desired. Serve immediately or chill in the fridge until ready to serve.
