Baked Feta Egg Breakfast Burritos

Ingredients

  • 1 tbsp butter softened
  • 7.5 oz feta cheese
  • 11 eggs
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup kale
  • 0.5 cup shishito peppers sliced
  • 1 medium bell pepper diced
  • 8 slices turkey bacon cooked
  • 4 large tortillas

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the baking dish by greasing an 8x8-inch dish with softened butter.
  3. Place a block of feta (about 7-8 oz) in the center of the dish and crack 10-12 eggs around it.
  4. Drizzle with olive oil and season with salt and black pepper.
  5. Bake for 20-22 minutes, or until most of the eggs have set.
  6. While the eggs bake, sauté a mix of garden veggies such as kale, shishito peppers, and diced bell pepper in a pan until tender. Set aside to cool.
  7. Use a fork to stir the baked eggs and feta mixture until it becomes scrambled eggs.
  8. Layer scrambled eggs, sautéed vegetables, and cooked turkey bacon inside warm tortillas. Wrap snugly.
  9. Store burritos in the fridge or freezer. To reheat, use oven-baked method or crisp them on the stovetop.
