Baked Feta Egg Breakfast Burritos

Ingredients
- 1 tbsp butter softened
- 7.5 oz feta cheese
- 11 eggs
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 cup kale
- 0.5 cup shishito peppers sliced
- 1 medium bell pepper diced
- 8 slices turkey bacon cooked
- 4 large tortillas
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the baking dish by greasing an 8x8-inch dish with softened butter.
- Place a block of feta (about 7-8 oz) in the center of the dish and crack 10-12 eggs around it.
- Drizzle with olive oil and season with salt and black pepper.
- Bake for 20-22 minutes, or until most of the eggs have set.
- While the eggs bake, sauté a mix of garden veggies such as kale, shishito peppers, and diced bell pepper in a pan until tender. Set aside to cool.
- Use a fork to stir the baked eggs and feta mixture until it becomes scrambled eggs.
- Layer scrambled eggs, sautéed vegetables, and cooked turkey bacon inside warm tortillas. Wrap snugly.
- Store burritos in the fridge or freezer. To reheat, use oven-baked method or crisp them on the stovetop.
