Summer Balsamic Steak & Peach Salad

Ingredients
- 0.33 cup Persian cucumber
- 0.5 cup cherry tomatoes
- 0.25 cup red onion
- 1 tbsp basil
- 1 tsp balsamic vinegar
- 0.25 tsp Italian seasoning
- 1 tbsp lemon juice
- 1 tbsp balsamic vinegar
- 0.5 tsp olive oil
- 0.25 tsp Italian seasoning
- 0.5 tsp basil
- 0.5 tsp oregano
- 0.25 tsp Black pepper
- 5 oz top sirloin steak
- 40 g pearl couscous
- 1.5 cups mixed greens
- 0.33 cup cooked pearl couscous
- 90 g grilled peach
Instructions
- Prepare the tomato cucumber salad by combining the chopped Persian cucumber, cherry tomatoes, red onion, basil, balsamic vinegar, and Italian seasoning.
- Prepare the lemon balsamic dressing by whisking together the lemon juice, balsamic vinegar, olive oil, Italian seasoning, chopped basil, oregano, and pepper.
- Cook the sirloin steak on a hot grill until it reaches your desired level of doneness. Once done, let it rest for a few minutes before slicing.
- Cook the pearl couscous according to package instructions.
- Assemble the salad by arranging the mixed greens on a plate, top with cooked couscous, tomato cucumber salad, grilled peaches, and the cooked steak. Drizzle the lemon balsamic dressing over the top, toss gently to combine, and serve.
