Cheesy Pork, Peppers, & Onion Breakfast Biscuits

Ingredients

  • 1 sheet parchment paper
  • 1 tablespoon avocado oil
  • 1 large yellow onion diced
  • 1 medium red bell pepper diced
  • 1 pound ground pork
  • 2 teaspoons kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground sage
  • 6 large eggs
  • 1 cup cheddar cheese
  • 1.5 cups blanched almond flour
  • 0.33 cup coconut flour
  • 2 teaspoons baking powder
  • 0.5 cup cheddar cheese

Instructions

  1. Preheat your oven to 400F and line a large baking sheet with parchment.
  2. Heat the avocado or olive oil in a skillet over medium heat. Add the diced onions and red bell pepper.
  3. Cook the onions and peppers until softened, about 6 to 8 minutes.
  4. Push the onion and pepper to the sides of the skillet. Add the ground pork to the center.
  5. Cook the pork while breaking up any large chunks until browned and the onions are translucent, about 8 minutes.
  6. Remove from heat. Season with kosher salt, ground black pepper, and ground sage. Mix well and pour off any excess oil.
  7. Whisk the eggs in a large bowl, then add the cooled pork mixture and 1 cup of shredded cheddar cheese. Mix well.
  8. Add blanched almond flour, coconut flour, and baking powder to the mixture. Mix until just combined.
  9. Scoop 12 balls of dough onto the prepared baking sheet, spacing them 1 to 2 inches apart. Lightly coat your palms with oil and gently flatten each ball.
  10. Evenly sprinkle the remaining 1/2 cup of cheddar cheese on top of each biscuit.
  11. Bake in the preheated oven for 12 to 14 minutes, until the cheese is melted and the biscuits are golden brown.
