Cheesy Pork, Peppers, & Onion Breakfast Biscuits

Ingredients
- 1 sheet parchment paper
- 1 tablespoon avocado oil
- 1 large yellow onion diced
- 1 medium red bell pepper diced
- 1 pound ground pork
- 2 teaspoons kosher salt
- 0.5 teaspoon ground black pepper
- 0.5 teaspoon ground sage
- 6 large eggs
- 1 cup cheddar cheese
- 1.5 cups blanched almond flour
- 0.33 cup coconut flour
- 2 teaspoons baking powder
- 0.5 cup cheddar cheese
Instructions
- Preheat your oven to 400F and line a large baking sheet with parchment.
- Heat the avocado or olive oil in a skillet over medium heat. Add the diced onions and red bell pepper.
- Cook the onions and peppers until softened, about 6 to 8 minutes.
- Push the onion and pepper to the sides of the skillet. Add the ground pork to the center.
- Cook the pork while breaking up any large chunks until browned and the onions are translucent, about 8 minutes.
- Remove from heat. Season with kosher salt, ground black pepper, and ground sage. Mix well and pour off any excess oil.
- Whisk the eggs in a large bowl, then add the cooled pork mixture and 1 cup of shredded cheddar cheese. Mix well.
- Add blanched almond flour, coconut flour, and baking powder to the mixture. Mix until just combined.
- Scoop 12 balls of dough onto the prepared baking sheet, spacing them 1 to 2 inches apart. Lightly coat your palms with oil and gently flatten each ball.
- Evenly sprinkle the remaining 1/2 cup of cheddar cheese on top of each biscuit.
- Bake in the preheated oven for 12 to 14 minutes, until the cheese is melted and the biscuits are golden brown.
