Miso Black Cod

Ingredients
- 0.25 cup sake used for marinade
- 0.25 cup mirin used for marinade
- 0.25 cup sugar white granulated
- 0.33 cup white miso paste
- 4 pieces black cod filets approximately 6 oz each
- 0 sake for rinsing
- 6 cups cold water
- 4 tbsp salt kosher salt preferred
- 0 pickled ginger for serving
- 0 chives for garnish
Instructions
- Heat sake and mirin in a saucepan over medium heat until the alcohol evaporates.
- Add sugar to the mixture and stir until fully dissolved.
- Remove from heat and whisk in white miso paste until smooth. Let cool.
- Rinse black cod filets with sake to reduce fishiness.
- Prepare a salt brine with cold water and salt. Submerge cod for 10 minutes then pat dry.
- Coat the cod in cooled miso marinade, ensuring an even layer. Refrigerate for 3 days.
- Heat broiler on high. Remove excess marinade from cod and place on a sheet tray.
- Broil cod for 8-10 minutes until the top is nicely caramelized.
- Serve with pickled ginger and garnish with chives.
