Fritos Cowboy Cabbage

A crunchy and flavorful salad featuring tricolored coleslaw, a variety of fresh vegetables, and Fritos, all topped with a zesty chipotle-lime dressing. Optional steak adds protein to this vibrant dish.

Fritos Cowboy Cabbage

Ingredients

  • 1 whole jalapeño
  • 1 whole red bell pepper
  • 1 can canned corn
  • 0.5 can black beans
  • 1 bunch cilantro
  • 1 bunch green onions
  • 1 bag tricolored coleslaw
  • 1 diced jalapeño
  • 1 diced red bell pepper
  • 1 can canned corn
  • 0.5 can black beans

  • 0.5 cup mayo
  • 0.5 cup sour cream
  • 2 tbsp chopped chipotles in adobo
  • 1 from 1 lime lime juice
  • 1 portion dressing
  • 1.5 lbs flank or skirt steak
  • 0.25 cup soy sauce
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 0.5 tsp black pepper
  • 1 from 1 lime lime juice
  • 1.5 lbs marinated steak
  • 1.5 lbs grilled steak
  • 1 bag Fritos
  • 1 portion composed salad
  • 1.5 lbs sliced steak

Instructions

  1. Using a sharp knife, dice the jalapeño into small pieces, removing the seeds if less heat is desired.
  2. Dice the red bell pepper into small, even-sized pieces.
  3. Drain the canned corn completely.
  4. Drain and rinse the black beans using a colander.
  5. Chop the bunch of cilantro finely, including the stems for extra flavor.
  6. Chop the green onions finely, separating white and green parts if desired.
  7. In a large bowl, combine the coleslaw, diced jalapeño, diced red bell pepper, drained corn, drained black beans, chopped cilantro, and chopped green onions.
  8. In a small bowl, whisk together the mayonnaise, sour cream, chopped chipotles in adobo, and lime juice until smooth.
  9. Pour most of the dressing over the salad ingredients. Reserve some dressing to adjust later if needed.
  10. If using steak, marinate the flank or skirt steak with soy sauce, minced garlic, olive oil, black pepper, and lime juice. Let it sit for at least 30 minutes.
  11. Preheat a grill to medium-high heat. Grill the steak for about 4 minutes per side, or until it reaches your desired doneness.
  12. Allow the steak to rest for 5 minutes before slicing it against the grain.
  13. Just before serving, toss the Fritos into the salad for added crunch.
  14. Serve the salad topped with slices of the grilled steak if desired, or mix the steak into the salad.
