Super Green Orzo With Roasted Salmon
Super Green Orzo with Roasted Salmon: Perfect summer recipe and great for meal prep. Takes 20 minutes to come together, high in protein and utterly delicious.

Ingredients
- 2 pieces shallots
- 2 cloves garlic
- 1 pinch salt
- 300 g orzo
- 700 ml stock
- 2 pieces salmon fillets
- 1 pinch salt
- 1 pinch pepper
- 30 g spinach
- 25 g basil
- 20 g mint
- 0.5 lemon
- 1 tbsp crème fraîche
- 1 pinch salt
- 75 g peas
- 1 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 220°C (428°F).
- Finely slice the 2 shallots using a sharp knife.
- Finely dice the 2 cloves of garlic.
- Heat a pan over medium heat and add a little oil.
- Add the sliced shallots and diced garlic to the pan with a pinch of salt. Sauté for 2 minutes until soft and fragrant.
- Add 300g of orzo to the pan and cook for 2 minutes to lightly toast it.
- Add 700ml of stock to the orzo, and bring to a simmer. Cook for 20 minutes, stirring regularly.
- Line a baking tray with parchment paper and place 2 salmon fillets on it. Season with salt and pepper.
- Roast the salmon in the preheated oven for 8-10 minutes.
- In a blender, combine 30g of spinach, 25g of basil, 20g of mint, 1/2 lemon's zest and juice, 1 tbsp crème fraîche, and a pinch of salt.
- Once the orzo is al dente, add 75g of peas and the blended spinach mixture to the pan.
- Stir the orzo thoroughly to combine with the peas and spinach mixture. Check and adjust seasoning if necessary.
- Divide the orzo between two plates, place a roasted salmon fillet on top of each.
- Finish with a grating of lemon zest and a drizzle of extra virgin olive oil over the top.
