5-Ingredient Lemon Tiramisu

Ingredients

  • 350 ml double cream
  • 50 g icing sugar
  • 1 tbsp lemon juice
  • 1 lemon lemon zest
  • 60 ml lemon juice
  • 20 g icing sugar
  • 26 pieces sponge fingers
  • 160 g lemon curd
  • 1 lemon sliced lemons
  • 1 handful fresh mint

Instructions

  1. Chill a large mixing bowl and whisk in the freezer for 10 minutes before whipping the cream.
  2. In the chilled bowl, combine 350ml cold double cream and 50g icing sugar.
  3. Whip the cream and icing sugar mixture on medium speed until soft peaks form.
  4. Fold in 1 tbsp of lemon juice and the zest from 1 lemon gently into the whipped cream.
  5. In a small bowl, mix 60ml lemon juice with 20g icing sugar to create the lemon syrup.
  6. Dip half of the 26 sponge fingers quickly into the lemon syrup and line the bottom of a 7x11” dish.
  7. Spread 160g of lemon curd evenly over the layer of sponge fingers.
  8. Spread half of the lemon cream mixture over the lemon curd layer.
  9. Repeat the layering process with the remaining sponge fingers, lemon curd, and lemon cream.
  10. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours or overnight.
  11. Before serving, optionally garnish with sliced lemons and fresh mint.
