5-Ingredient Lemon Tiramisu
This 5-ingredient Lemon Tiramisu is light, creamy, fruity, tangy, and zesty all in one. It's really quick and easy to make; just prepare it and leave it in the fridge overnight. A perfect dessert that is fresh and vibrant, perfect for any occasion.

Ingredients
- 350 ml double cream
- 50 g icing sugar
- 1 tbsp lemon juice
- 1 lemon lemon zest
- 60 ml lemon juice
- 20 g icing sugar
- 26 pieces sponge fingers
- 160 g lemon curd
- 1 lemon sliced lemons
- 1 handful fresh mint
Instructions
- Chill a large mixing bowl and whisk in the freezer for 10 minutes before whipping the cream.
- In the chilled bowl, combine 350ml cold double cream and 50g icing sugar.
- Whip the cream and icing sugar mixture on medium speed until soft peaks form.
- Fold in 1 tbsp of lemon juice and the zest from 1 lemon gently into the whipped cream.
- In a small bowl, mix 60ml lemon juice with 20g icing sugar to create the lemon syrup.
- Dip half of the 26 sponge fingers quickly into the lemon syrup and line the bottom of a 7x11” dish.
- Spread 160g of lemon curd evenly over the layer of sponge fingers.
- Spread half of the lemon cream mixture over the lemon curd layer.
- Repeat the layering process with the remaining sponge fingers, lemon curd, and lemon cream.
- Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours or overnight.
- Before serving, optionally garnish with sliced lemons and fresh mint.
