Strawberry Cream Cheese French Toast

Strawberry Cream Cheese French Toast

Ingredients

  • 110 grams cream cheese
  • 17 grams freeze dried strawberries
  • 110 grams greek yogurt
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon fine sea salt
  • 2 tablespoons heavy cream
  • 225 grams brioche bread
  • 4 large eggs
  • 0.25 teaspoon fine sea salt
  • 75 grams milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons salted butter

Instructions

  1. In a small blender or food processor, add cream cheese, freeze dried strawberries, Greek yogurt, vanilla, and salt.
  2. Add heavy cream as needed until you achieve a smooth filling consistency.
  3. Slice brioche loaf into 2 inch thick slices.
  4. Cut a slit in the bottom of each slice to create a pocket inside.
  5. Fill each bread slice with the strawberry cream cheese filling.
  6. In a baking dish, whisk together eggs with a pinch of salt.
  7. Add milk and vanilla extract to the egg mixture and whisk again.
  8. Preheat a cast iron skillet over medium-low heat and melt butter in it.
  9. Soak both sides of each stuffed slice in the custard mixture.
  10. Place the soaked slices in the warm skillet and cook until golden brown on one side.
  11. Flip the slices and cook the other side until golden brown.
  12. Keep cooked slices warm in an oven set to 200°F.
  13. Optionally, dust with powdered sugar and top with whipped cream before serving.
