Instructions
- Using a sharp knife, remove the rind from the watermelon and cut the flesh into roughly uniform cubes for easy blending.
- Place the watermelon cubes into a blender or use an immersion blender to puree until completely smooth with no chunks remaining.
- Pour the blended watermelon through a fine mesh sieve into a large bowl to remove any pulp and foam, ensuring a smooth granita.
- Juice the limes and add the juice to the watermelon puree. Make sure to catch any seeds.
- Add the sugar and salt to the watermelon and lime mixture. Stir well until completely dissolved.
- Pour the mixture into a shallow, flat-bottom container, ensuring the depth does not exceed 2 inches to allow proper freezing.
- Place the container in the freezer for 12–24 hours until the mixture is completely solid.
- Once frozen solid, use a spoon or a fork to scrape the surface of the granita towards you, creating fluffy ice crystals.
- To serve, pile the scraped granita into chilled bowls and finish each serving with a pinch of crushed aleppo chili flakes and an extra squeeze of lime for added flavor.
