Matcha Cookies with Mascarpone Frosting

Ingredients
- 1 cup unsalted butter 2 sticks
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2.5 cups all-purpose flour
- 2 tablespoons matcha powder
- 8 ounces mascarpone cheese
- 0.5 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons honey
- 0.5 cup heavy whipping cream
- 0 additional matcha powder for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, cream together 1 cup (2 sticks) unsalted butter and 1 cup granulated sugar until light and fluffy.
- Add 2 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
- In a separate bowl, whisk together 2 1/2 cups all-purpose flour and 2 tablespoons matcha powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until edges are lightly golden. Transfer to a wire rack to cool completely.
- To make the mascarpone frosting, beat together 8 ounces mascarpone cheese, 1/2 cup powdered sugar, 1 teaspoon vanilla extract, 2 tablespoons honey, and 1/2 cup heavy whipping cream until smooth and fluffy.
- Frost the cooled cookies with the mascarpone frosting and sprinkle lightly with additional matcha powder if desired. Serve with a matcha latte for an extra matcha experience.
