Spicy Mexican Street Shrimp

Ingredients

  • 16 ounce extra-large shrimp
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 0.25 cup chipotle adobo sauce
  • 2 tablespoon oil
  • 1 lime lime juice
  • 3 tablespoon oil
  • 16 ounce extra-large shrimp
  • 0.5 cup crema
  • 0.25 cup cotija cheese
  • 0.25 cup cilantro
  • 2 whole lime wedges

Instructions

  1. Rinse 16 ounces of extra-large shrimp under cold water. Pat them dry with paper towels. Ensure they are deveined and tails are on for easy handling.
  2. In a large mixing bowl, combine 1 teaspoon of salt, 1 teaspoon pepper, 1 teaspoon garlic powder, and 1/4 cup chipotle adobo sauce.
  3. Add the shrimp to the bowl, then pour 2 tablespoons of oil and juice of one lime over the shrimp. Mix thoroughly to ensure the shrimp are evenly coated with the marinade.
  4. Heat 2-3 tablespoons of oil in a large skillet over high heat until shimmering but not smoking.
  5. Carefully add the shrimp to the hot skillet. Cook undisturbed for 1-2 minutes until the shrimp develop a nice seared golden color.
  6. Flip the shrimp over and cook for an additional 2 minutes until the shrimp is pink, opaque, and plump.
  7. Remove the shrimp from the skillet and arrange them on a serving plate.
  8. Garnish the shrimp with crema, crumbled cotija cheese, chopped cilantro, and lime wedges.
