Soy Sauce Fried Eggs

Ingredients

  • 1 tablespoon light soy sauce
  • 0.5 tablespoon dark soy sauce
  • 1 teaspoon water
  • 1 teaspoon brown sugar
  • 2 teaspoon sesame oil
  • 0.5 whole onion
  • 0.5 cup green onions
  • 3 clove garlic
  • 3 teaspoon sesame seeds
  • 3 teaspoon chili flakes
  • 2 large eggs
  • 1 tablespoon chilli oil

Instructions

  1. In a small bowl, whisk together 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, 1 teaspoon water, and 1 teaspoon brown sugar until well combined.
  2. Heat 2 teaspoons sesame oil in a non-stick pan over medium heat until shimmering.
  3. Add 1/2 sliced onion to the pan and sauté for 2-3 minutes until the onion begins to soften.
  4. Add a handful of sliced green onions and 3-4 cloves of minced garlic to the pan. Stir and cook for another 2 minutes until fragrant.
  5. Stir in 3 teaspoons sesame seeds and 3 teaspoons chili flakes. Cook for 1 minute until the mixture is fragrant and the onions are caramelized.
  6. Push the mixture to the edges of the pan, creating an open space in the center. Crack 2 large eggs into the center.
  7. Once the egg whites start to set, pour the prepared soy sauce mixture over the eggs.
  8. Drizzle 1 tablespoon of chili oil around the edges of the eggs if desired, and cook until the whites are fully set and the yolks reach your preferred doneness.
  9. Serve the soy sauce fried eggs hot over a bowl of rice, noodles, or on toast.
