Crispy Chilli Fries

Ingredients

  • 3 potatoes
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp red chilli flakes
  • 1 egg
  • 1 cup flour
  • 3 tbsp water
  • 0.5 cup flour
  • 0 oil for frying
  • 0 coated fries
  • 2 tbsp butter
  • 2 garlic cloves
  • 2 tsp chilli flakes
  • 4 tbsp ketchup
  • 1 tbsp soya sauce
  • 2 tbsp chili garlic sauce
  • 2 tbsp water
  • 0 fried fries
  • 0 sesame seeds
  • 0 parsley or coriander

Instructions

  1. Peel and cut 3 potatoes into thin strips, resembling fries. If using frozen fries, skip this step.
  2. In a large bowl, combine 1 tsp salt, 1 tsp oregano, 1 tsp paprika, and 1 tsp red chilli flakes.
  3. Crack 1 egg into the bowl with the spices and mix well.
  4. Add 1 cup of flour into the spiced egg mixture to coat the potatoes thoroughly.
  5. Add 3 tbsp water to the mixture and gently combine until a smooth batter forms.
  6. Add the remaining 1/2 cup flour to thicken the batter and coat the potatoes completely.
  7. Let the coated potatoes rest for 10 minutes to allow the batter to set.
  8. Heat oil in a deep pan over medium heat until it reaches 350°F (175°C).
  9. Carefully place the coated fries in the hot oil, frying them in batches for 8-10 minutes or until golden and crispy.
  10. Remove the fried potatoes and place them on a wire rack to drain excess oil.
  11. In a separate pan, melt 2 tbsp butter over low heat.
  12. Add 2 minced garlic cloves to the melted butter and sauté for 1-2 minutes until fragrant.
  13. Stir in 2 tsp chilli flakes and sauté for an additional minute.
  14. Add 4 tbsp ketchup, 1 tbsp soy sauce, 2 tbsp chili garlic sauce, and 2 tbsp water to the pan.
  15. Cook the sauce over medium heat for 3-4 minutes, until thickened.
  16. Add the fried fries to the sauce, mixing well to ensure each piece is coated.
  17. Garnish with sesame seeds and parsley or coriander before serving.
