Spicy-Ish Chicken Rice Noodle Bowls

Ingredients
- 8 oz rice noodles
- 1 head bok choy
- 4 green onions
- 2 cups chicken broth
- 0.25 cup low sodium soy sauce
- 1 tb arrowroot starch
- 2 tsp coconut sugar
- 2 tb olive oil

- 0.33 cup sambal oelek
- 1 lb ground chicken
- 1 batch sauce mixture
- 1 head bok choy
- 8 oz rice noodles

Instructions
- Cook the rice noodles according to the package instructions. Drain and rinse under cold water. Set aside.
- Chop the head of bok choy, separating the white stalks and the green leafy parts into two separate bowls.
- Slice the green onions and set aside.
- In a bowl, whisk together the chicken broth, low sodium soy sauce, and arrowroot starch. Then whisk in the coconut sugar until dissolved.
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the white stalks of the bok choy and cook for 3-4 minutes until slightly softened.
- Add the green leaves of the bok choy to the pan and cook for an additional minute. Remove bok choy from the pan and set aside.
- In the same pan, heat the remaining olive oil. Add the sliced green onions, grated ginger, mashed garlic, and sambal oelek. Stir-fry for about 2 minutes until fragrant.
- Add the ground chicken to the pan. Use a spatula to break it into small pieces. Cook until the chicken is browned and cooked through.
- Add the prepared sauce to the pan, and stir to combine. Return the bok choy to the pan and stir until everything is well coated.
- Add the cooked rice noodles to the pan. Gently toss until the noodles are heated through and fully coated with the sauce.
- Divide the noodle mixture into bowls. Garnish with additional sliced green onions and chili crisp to taste.
