Cinnamon Roll Cottage Cheese Pancakes

Ingredients

  • 1.25 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup Daisy Cottage Cheese
  • 3 large large eggs
  • 2 Tbsps milk of choice
  • 2 Tbsps coconut oil
  • 1 Tbsp maple syrup
  • 1 tsp vanilla
  • 2.5 Tbsps butter
  • 0.33 cup brown sugar
  • 1.5 tsp cinnamon
  • 1 tsp butter
  • 0.25 cup Daisy Cottage Cheese
  • 2 Tbsps maple syrup

Instructions

  1. In a large mixing bowl, combine 1 1/4 cup all-purpose flour, 2 tsp baking powder, and 1 tsp cinnamon. Whisk together until evenly mixed.
  2. In a blender, combine 1 cup Daisy Cottage Cheese, 3 large eggs, 2 Tbsps milk of choice, 2 Tbsps melted and cooled coconut oil, 1 Tbsp maple syrup, and 1 tsp vanilla. Blend until smooth.
  3. Pour the liquid ingredients into the dry ingredients bowl and mix just until well combined.
  4. In a small bowl, melt 2 1/2 Tbsps butter, then stir in 1/3 cup brown sugar and 1 1/2 tsp cinnamon until well combined to create the cinnamon filling.
  5. Heat a non-stick frying pan over medium heat and lightly coat with butter. Pour about 1/4 cup of pancake batter for each pancake into the pan.
  6. Cover the pan with a lid for 30 seconds to help the pancakes rise.
  7. Swirl the cinnamon filling on top of each pancake, re-cover the pan, and cook for another 4-5 minutes until bubbles form on the surface.
  8. Remove the lid and carefully flip each pancake. Cook for an additional 1-2 minutes until the pancakes are cooked through and golden brown.
  9. In a blender, combine 1/4 cup Daisy Cottage Cheese and 2 Tbsps maple syrup until smooth to create the icing.
  10. Drizzle the icing over the pancakes before serving.
