Cinnamon Roll Cottage Cheese Pancakes
These Cinnamon Roll Cottage Cheese Pancakes are light, fluffy, and reminiscent of a cinnamon roll in pancake form. This easy, high-protein breakfast is made with Daisy Cottage Cheese for the best texture and flavor.

Ingredients
- 1.25 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 cup Daisy Cottage Cheese
- 3 large large eggs
- 2 Tbsps milk of choice
- 2 Tbsps coconut oil
- 1 Tbsp maple syrup
- 1 tsp vanilla
- 2.5 Tbsps butter
- 0.33 cup brown sugar
- 1.5 tsp cinnamon
- 1 tsp butter
- 0.25 cup Daisy Cottage Cheese
- 2 Tbsps maple syrup
Instructions
- In a large mixing bowl, combine 1 1/4 cup all-purpose flour, 2 tsp baking powder, and 1 tsp cinnamon. Whisk together until evenly mixed.
- In a blender, combine 1 cup Daisy Cottage Cheese, 3 large eggs, 2 Tbsps milk of choice, 2 Tbsps melted and cooled coconut oil, 1 Tbsp maple syrup, and 1 tsp vanilla. Blend until smooth.
- Pour the liquid ingredients into the dry ingredients bowl and mix just until well combined.
- In a small bowl, melt 2 1/2 Tbsps butter, then stir in 1/3 cup brown sugar and 1 1/2 tsp cinnamon until well combined to create the cinnamon filling.
- Heat a non-stick frying pan over medium heat and lightly coat with butter. Pour about 1/4 cup of pancake batter for each pancake into the pan.
- Cover the pan with a lid for 30 seconds to help the pancakes rise.
- Swirl the cinnamon filling on top of each pancake, re-cover the pan, and cook for another 4-5 minutes until bubbles form on the surface.
- Remove the lid and carefully flip each pancake. Cook for an additional 1-2 minutes until the pancakes are cooked through and golden brown.
- In a blender, combine 1/4 cup Daisy Cottage Cheese and 2 Tbsps maple syrup until smooth to create the icing.
- Drizzle the icing over the pancakes before serving.
