Giant Halloumi, Spring Onion & Sweetcorn Fritter

A giant sweetcorn fritter loaded with halloumi and spring onions. This one-pan wonder is easy to prepare and full of flavor. No need for batch cooking; simply pour the batter into the pan, cook, and flip. Serve with your choice of toppings like a fried egg, avocado, and a drizzle of hot honey.

Giant Halloumi, Spring Onion & Sweetcorn Fritter

Ingredients

  • 80 grams sweetcorn
  • 2 pieces spring onions
  • 30 grams halloumi
  • 30 grams self-raising flour
  • 1 pinch salt
  • 1 pinch pepper
  • 0.5 teaspoon smoked paprika
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 batch fritter batter

Instructions

  1. Measure 80g of sweetcorn and add it to a large mixing bowl.
  2. Slice 2 spring onions thinly and add them to the bowl with the sweetcorn.
  3. Cut 30g of halloumi cheese into small cubes and add to the bowl.
  4. Add 30g of self-raising flour to the bowl.
  5. Season the mixture with a pinch of salt, a pinch of pepper, and 1/2 teaspoon of smoked paprika.
  6. Crack 1 large egg into the bowl, mixing well until all ingredients are fully combined.
  7. Heat a large, non-stick frying pan over medium heat and add 1 tablespoon of olive oil or a small amount of butter.
  8. Once the pan is hot, pour the batter into it, spreading it out evenly.
  9. Cook the fritter for 3 to 4 minutes, until tiny bubbles start to form on the surface.
  10. Carefully flip the fritter with a spatula and cook for an additional 3 to 4 minutes.
  11. Transfer the fritter to a plate and serve with optional toppings like a fried egg, avocado, and hot honey.
