Giant Halloumi, Spring Onion & Sweetcorn Fritter
A giant sweetcorn fritter loaded with halloumi and spring onions. This one-pan wonder is easy to prepare and full of flavor. No need for batch cooking; simply pour the batter into the pan, cook, and flip. Serve with your choice of toppings like a fried egg, avocado, and a drizzle of hot honey.

Ingredients
- 80 grams sweetcorn
- 2 pieces spring onions
- 30 grams halloumi
- 30 grams self-raising flour
- 1 pinch salt
- 1 pinch pepper
- 0.5 teaspoon smoked paprika
- 1 large egg
- 1 tablespoon olive oil
- 1 batch fritter batter
Instructions
- Measure 80g of sweetcorn and add it to a large mixing bowl.
- Slice 2 spring onions thinly and add them to the bowl with the sweetcorn.
- Cut 30g of halloumi cheese into small cubes and add to the bowl.
- Add 30g of self-raising flour to the bowl.
- Season the mixture with a pinch of salt, a pinch of pepper, and 1/2 teaspoon of smoked paprika.
- Crack 1 large egg into the bowl, mixing well until all ingredients are fully combined.
- Heat a large, non-stick frying pan over medium heat and add 1 tablespoon of olive oil or a small amount of butter.
- Once the pan is hot, pour the batter into it, spreading it out evenly.
- Cook the fritter for 3 to 4 minutes, until tiny bubbles start to form on the surface.
- Carefully flip the fritter with a spatula and cook for an additional 3 to 4 minutes.
- Transfer the fritter to a plate and serve with optional toppings like a fried egg, avocado, and hot honey.
