JalapeñO Popper Creamy Cauliflower Rice With Crispy Air Fried Chicken

Ingredients
- 2 pieces bacon
- 0.5 jalapeño
- 1 tbsp scallions
- 2 pieces bacon
- 1.25 cups cooked cauliflower rice
- 0.25 tsp garlic powder
- 0.25 tsp paprika
- 0.25 tsp black pepper
- 0 to taste salt
- 1 tsp butter
- 0.75 cup milk
- 0.75 cup shredded cheddar cheese
- 1.5 tbsp whipped cream cheese
- 2 pieces bacon
- 0.5 jalapeño
- 1 tbsp scallions
- 1.25 cups cooked cauliflower rice
- 2 pieces frozen low-carb chicken pieces
- 2 tbsp ranch dressing
Instructions
- Chop the 2 pieces of bacon into small pieces.
- Dice 1/2 jalapeño finely, removing seeds for less heat.
- Chop 1 tablespoon of scallions.
- Cook the bacon pieces in a pan over medium heat until crispy.
- Remove the bacon from the pan and drain on paper towels. Remove excess bacon fat, leaving a small amount for flavor.
- In the same pan, add 1 1/4 cup of cooked cauliflower rice and season with garlic powder, paprika, black pepper, and salt to taste.
- Once cauliflower rice is softened, remove from pan and set aside.
- Melt 1 teaspoon of butter in the pan over low heat.
- Add 3/4 cup of milk of your choice to the pan and slowly whisk in 3/4 cup shredded cheddar cheese until melted.
- Add 1.5 tablespoons of whipped cream cheese and continue stirring until the mixture is smooth and creamy.
- Stir in the crispy bacon, diced jalapeño, and chopped scallions into the cheese sauce.
- Add the cooked cauliflower rice to the cheese sauce and combine thoroughly.
- Air fry frozen low-carb chicken pieces according to package instructions until crispy, about 15 minutes at 400°F.
- Serve the jalapeño popper cauliflower rice in bowls, top with crispy chicken pieces, and drizzle with ranch dressing if desired.
