One Pan Marry Me Chicken Rice

One Pan Marry Me Chicken Rice

Ingredients

  • 2 tablespoons olive oil
  • 4 pieces chicken breasts
  • 0 salt to taste
  • 0 black pepper to taste
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1.5 cups black pepper
  • 3 cups chicken broth
  • 1 cup coconut milk or heavy cream
  • 2 cups fresh spinach
  • 0.5 cup Parmesan cheese grated

Instructions

  1. Heat olive oil in a large pan over medium-high heat. Add chicken breasts seasoned with salt and black pepper, and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the pan and set aside.
  2. In the same pan, add garlic and sun-dried tomatoes. Cook until garlic is fragrant, about 1-2 minutes. Add orzo and stir to coat in the garlic oil mixture.
  3. Add chicken broth to the pan. Bring to a simmer, then reduce heat to low. Cover and let cook until the orzo is tender and the broth is absorbed, about 10 minutes.
  4. Add coconut milk or heavy cream and stir to combine. Return the chicken to the pan and cook until heated through and the sauce has thickened slightly, about 2-3 minutes.
  5. Stir in fresh spinach and Parmesan cheese. Mix until the spinach is wilted and the cheese is melted. Serve immediately and enjoy.
