One Pan Marry Me Chicken Rice
A creamy, comforting chicken and rice dish cooked in one pan with fresh garlic, sun-dried tomatoes, spinach, and Parmesan cheese.

Ingredients
- 2 tablespoons olive oil
- 4 pieces chicken breasts
- 0 salt to taste
- 0 black pepper to taste
- 4 cloves garlic minced
- 0.5 cup sun-dried tomatoes chopped
- 1.5 cups black pepper
- 3 cups chicken broth
- 1 cup coconut milk or heavy cream
- 2 cups fresh spinach
- 0.5 cup Parmesan cheese grated
Instructions
- Heat olive oil in a large pan over medium-high heat. Add chicken breasts seasoned with salt and black pepper, and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add garlic and sun-dried tomatoes. Cook until garlic is fragrant, about 1-2 minutes. Add orzo and stir to coat in the garlic oil mixture.
- Add chicken broth to the pan. Bring to a simmer, then reduce heat to low. Cover and let cook until the orzo is tender and the broth is absorbed, about 10 minutes.
- Add coconut milk or heavy cream and stir to combine. Return the chicken to the pan and cook until heated through and the sauce has thickened slightly, about 2-3 minutes.
- Stir in fresh spinach and Parmesan cheese. Mix until the spinach is wilted and the cheese is melted. Serve immediately and enjoy.
