Creamy Tuscan Chicken Pasta
A delicious and creamy pasta dish made in under 30 minutes. It features pan-fried seasoned chicken, sautéed vegetables, rich double cream, and sun-dried tomatoes, all combined with pasta and spinach for a quick and hearty meal.

Ingredients
- 4 pieces chicken breast
- 0 salt to taste
- 0 black pepper to taste
- 2 tablespoons olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 red bell pepper chopped
- 1 cup double cream
- 0.5 cup reserved pasta water or chicken stock
- 0.5 cup chicken stock or reserved pasta water
- 0.5 cup sun-dried tomatoes chopped
- 0.5 cup Parmesan cheese grated
- 2 cups spinach fresh
- 4 cups pasta cooked
Instructions
- Season the chicken breasts with salt and black pepper. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until fully cooked through. Remove the chicken from the pan and set aside.
- In the same pan, add 1 chopped onion, 3 minced garlic cloves, and 1 chopped red bell pepper. Sauté for about 3-5 minutes or until the vegetables are slightly soft.
- Add 1 cup of double cream and 1/2 cup of reserved pasta water or chicken stock to the pan. Stir to combine.
- Add 1/2 cup of chopped sun-dried tomatoes, 1/2 cup of grated Parmesan cheese, and 2 cups of fresh spinach to the pan. Stir until the spinach is wilted and the cheese is melted.
- Cook your choice of pasta according to the package instructions and drain, reserving some of the pasta water if using. Add the cooked pasta directly to the pan with the sauce. Mix well to combine and let it sit for a few minutes to allow the sauce to thicken.
- Slice the cooked chicken breasts and place them on top of the pasta. Add more sauce from the pan if desired. Serve immediately and enjoy.
