Summer Watermelon Salad

A refreshing summer salad combining watermelon, cucumber, red onion, basil, mint, and feta, seasoned with red wine vinegar and lime zest.

Summer Watermelon Salad

Ingredients

  • 1 large watermelon cubed
  • 1 medium red onion thinly sliced
  • 1 large cucumber thinly sliced
  • 1 cup basil leaves thinly sliced
  • 0.5 cup mint leaves thinly sliced
  • 1 cup feta cheese crumbled
  • 2 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 0 black pepper to taste
  • 0 salt to taste
  • 1 tsp lime zest
  • 1 lime lime juice
  • 0.25 cup basil leaves for garnish
  • 0.25 cup mint leaves for garnish

Instructions

  1. Trim the watermelon by removing the rind and cut it into small cubes. Transfer the watermelon cubes into a large mixing bowl.
  2. Thinly slice the red onion and cucumber. Add them to the bowl with the watermelon.
  3. Roll the basil leaves and slice them into thin ribbons. Repeat the process with the mint leaves. Add the basil and mint ribbons to the bowl.
  4. Crumble the feta cheese into the bowl. Drizzle with red wine vinegar and extra virgin olive oil, and then season with black pepper, salt, lime zest, and lime juice. Toss the salad thoroughly and gently.
  5. Garnish with additional basil and mint leaves before serving. The salad gets better as it sits, so feel free to let it rest for a few minutes before enjoying.
