Spicy Peach & Chickpea Salad

Ingredients

  • 0.25 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon agave
  • 0.25 teaspoon chipotle powder
  • 0.5 teaspoon salt
  • 1 pinch black pepper
  • 3 cups chickpeas
  • 0.5 each cucumber
  • 3 each peaches
  • 1 each watermelon radish
  • 1 each jalapeño
  • 1 each avocado
  • 0.5 ounce fresh basil
  • 3 cups chickpeas

Instructions

  1. In a small bowl, whisk together the extra virgin olive oil, fresh lime juice, agave, chipotle powder, salt, and black pepper until well combined.
  2. Rinse and drain the chickpeas thoroughly in a colander.
  3. Slice the cucumber into thin rounds, about 1/4 inch thick.
  4. Halve the peaches, remove the pits, and slice them into wedges.
  5. Peel and thinly slice the watermelon radish into rounds.
  6. Thinly slice the jalapeño, removing the seeds for less heat.
  7. Halve the avocado, remove the pit, and dice into cubes.
  8. Chop the fresh basil leaves into thin ribbons.
  9. In a large salad bowl, combine the chickpeas, cucumber, peaches, watermelon radish, jalapeño, avocado, and fresh basil.
  10. Pour the dressing over the salad and toss everything together gently until well coated.
  11. Serve the salad immediately or refrigerate for up to 2 hours before serving.
