Creamy Sausage Ditalini

Cook time: 25 minutes

Servings: 4

Ingredients

  • 2.25 cups ditalini pasta
  • 1 lb sausage
  • 2.25 cups ditalini pasta
  • 4.5 cloves garlic
  • 3.5 cups broth
  • 0.5 cup heavy cream
  • 0 to taste pepper
  • 3 tablespoons butter
  • 0.33 cup Parmesan cheese
  • 0 to taste parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add ditalini pasta and cook until al dente, according to package instructions. Drain and set aside.
  2. In a large skillet over medium-high heat, add 1 lb of sausage. Use a spatula to break it up as it cooks until almost fully cooked.
  3. Reduce the heat to medium and add the ditalini pasta and minced garlic to the skillet with the sausage. Sauté for about a minute to toast the pasta and coat it in the sausage.
  4. Pour in 3.5 cups of broth and bring to a simmer. Continue simmering until most of the liquid has evaporated, stirring occasionally to prevent sticking.
  5. Add 1/2 cup of heavy cream to the skillet and season with pepper to taste. Continue to simmer until most of the liquid is absorbed.
  6. Turn off the heat. Stir in 3 tablespoons of butter and 1/3 cup of grated Parmesan cheese until fully melted and combined.
  7. Finely chop fresh parsley and use it to garnish the pasta before serving.
