Animal Style Sweet Potatoes
An insane combination of flavors that won't disappoint! Not to mention, this recipe is super easy and doesn't take too long to make!

Ingredients
- 0.5 cup avocado mayo
- 2 tbsp ketchup
- 1.5 tbsp yellow mustard
- 1 tbsp pickle juice
- 3 tbsp diced pickles

- 1 large sweet potato

- 1 lb lean ground beef
- 3 tbsp yellow mustard
- 0 to taste beef seasoning
- 1 lb lean ground beef
- 0 to taste american cheese
Instructions
- In a small bowl, combine 1/2 cup of avocado mayo, 2 tbsp of ketchup, 1.5 tbsp of yellow mustard, 1 tbsp of pickle juice, and 3 tbsp of finely diced pickles. Add salt, garlic powder, paprika, and cane sugar to taste. Mix until smooth. Cover and refrigerate.
- Using a sharp knife, dice 1 large white onion into small pieces.
- In a large skillet, melt 3 tbsp of butter over medium-low heat. Add the diced onions, a sprinkle of cane sugar, and a sprinkle of salt.
- Cook the onions on medium-low heat, stirring every few minutes, until they are caramelized and golden brown. This should take about 20 minutes.
- Peel 1 large sweet potato and dice into 1-inch cubes.
- Preheat your oven to 425°F (220°C).
- On a lined baking sheet, place the diced sweet potatoes. Drizzle with avocado oil and season with salt, pepper, garlic powder, and paprika. Toss to coat the sweet potatoes evenly.
- Roast the sweet potatoes in the preheated oven for 25-30 minutes, flipping halfway through, until they are soft on the inside and crispy on the outside.
- In a large greased skillet over medium-high heat, add 1 lb of lean ground beef. Break up the meat using a wooden spoon.
- Add approximately 3 tbsp of yellow mustard to the beef, along with your beef seasoning of choice. Mix until well combined.
- Cook the beef mixture for 6-8 minutes, stirring occasionally, until fully cooked. The beef should be browned and cooked through.
- On a plate, serve a portion of roasted sweet potatoes. Top with a layer of the cooked beef, followed by caramelized onions. Optionally, add slices of American cheese.
- Drizzle the special sauce generously over the top, and serve immediately.
