Animal Style Sweet Potatoes

Ingredients

  • 0.5 cup avocado mayo
  • 2 tbsp ketchup
  • 1.5 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 3 tbsp diced pickles
  • 0 to taste salt

  • 0 to taste paprika
  • 0 to taste cane sugar
  • 1 large white onion
  • 3 tbsp butter
  • 0 sprinkle cane sugar
  • 0 sprinkle salt
  • 1 large white onion
  • 1 large sweet potato
  • 0 to taste avocado oil
  • 0 to taste salt
  • 0 to taste black pepper
  • 0 to taste garlic powder
  • 0 to taste paprika
  • 1 large sweet potato
  • 1 lb lean ground beef
  • 3 tbsp yellow mustard
  • 0 to taste beef seasoning
  • 1 lb lean ground beef
  • 0 to taste american cheese

Instructions

  1. In a small bowl, combine 1/2 cup of avocado mayo, 2 tbsp of ketchup, 1.5 tbsp of yellow mustard, 1 tbsp of pickle juice, and 3 tbsp of finely diced pickles. Add salt, garlic powder, paprika, and cane sugar to taste. Mix until smooth. Cover and refrigerate.
  2. Using a sharp knife, dice 1 large white onion into small pieces.
  3. In a large skillet, melt 3 tbsp of butter over medium-low heat. Add the diced onions, a sprinkle of cane sugar, and a sprinkle of salt.
  4. Cook the onions on medium-low heat, stirring every few minutes, until they are caramelized and golden brown. This should take about 20 minutes.
  5. Peel 1 large sweet potato and dice into 1-inch cubes.
  6. Preheat your oven to 425°F (220°C).
  7. On a lined baking sheet, place the diced sweet potatoes. Drizzle with avocado oil and season with salt, pepper, garlic powder, and paprika. Toss to coat the sweet potatoes evenly.
  8. Roast the sweet potatoes in the preheated oven for 25-30 minutes, flipping halfway through, until they are soft on the inside and crispy on the outside.
  9. In a large greased skillet over medium-high heat, add 1 lb of lean ground beef. Break up the meat using a wooden spoon.
  10. Add approximately 3 tbsp of yellow mustard to the beef, along with your beef seasoning of choice. Mix until well combined.
  11. Cook the beef mixture for 6-8 minutes, stirring occasionally, until fully cooked. The beef should be browned and cooked through.
  12. On a plate, serve a portion of roasted sweet potatoes. Top with a layer of the cooked beef, followed by caramelized onions. Optionally, add slices of American cheese.
  13. Drizzle the special sauce generously over the top, and serve immediately.
