Chimichurri Steak Salad With Pickled Onions, Feta & Avocado

Ingredients
- 1 lb ribeye or flank steak
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp avocado oil
- 1 lb ribeye or flank steak
- 3 knobs butter
- 1 bunch rosemary
- 1 bunch thyme
- 1 clove garlic clove
- 5 oz arugula
- 1 ripe medium avocado, sliced
- 0.33 cup crumbled feta
- 0.5 cup quick pickled red onions
- 0.33 cup olive oil
- 2 tbsp red wine vinegar
- 1 clove grated garlic
- 2 tbsp finely chopped parsley
- 1 tbsp finely chopped cilantro
- 0.5 tsp red pepper flakes
- 1 tbsp honey
- 0.5 lemon
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 lb ribeye or flank steak
Instructions
- Prepare the steak by patting it dry with paper towels. Season generously with salt and pepper on both sides.
- Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat until shimmering.
- Add the steak to the skillet and sear for 3-4 minutes on each side for medium rare, or until desired doneness.
- In the final minute of cooking, add 2-3 knobs of butter, rosemary, thyme, and 1 smashed garlic clove. Tilt the pan and baste the steak with the melted butter.
- Remove the steak from the pan and let it rest on a cutting board for 10 minutes before slicing.
- While the steak rests, prepare the salad. In a large bowl, combine arugula, sliced avocado, crumbled feta, and quick pickled red onions.
- In a small bowl, whisk together olive oil, red wine vinegar, grated garlic, finely chopped parsley, cilantro, red pepper flakes, honey, and lemon juice. Add salt and pepper to taste.
- Slice the rested steak against the grain into thin slices.
- Arrange the steak slices over the prepared salad mixture in a serving platter.
- Drizzle the chimichurri-inspired vinaigrette over the salad just before serving.
