Beef & Broccoli Stir Fry

Ingredients
- 2.5 tbsp oyster sauce
- 1 tbsp light soy sauce
- 0.5 tbsp toasted sesame oil
- 2 tsp sugar
- 0.25 cup beef or chicken stock
- 2 tbsp vegetable oil
- 250 g broccoli florets
- 2 tsp fresh ginger
- 1 tsp garlic
- 2 tbsp vegetable oil
- 600 g flank steak
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp cornstarch
- 1 tbsp water
- 2 cups steamed rice
- 2 tbsp spring onion
Instructions
- Prepare the stir fry sauce by mixing 2 1/2 tablespoons of oyster sauce, 1 tablespoon of light soy sauce, 1/2 tablespoon of toasted sesame oil, 2 teaspoons of sugar, and 1/4 cup of beef or chicken stock in a bowl. Set this aside.
- Heat 2 tablespoons of vegetable oil in a wok or large frying pan over medium heat.
- Add 250g of broccoli florets to the pan and stir-fry for around 4 minutes, or until just tender.
- Add 2 teaspoons of thinly sliced fresh ginger and 1 teaspoon of minced garlic to the pan and cook for another 30 seconds until fragrant.
- Remove the broccoli, ginger, and garlic from the pan, transfer to a plate, and cover to keep warm.
- Turn the heat up to high and add another 2 tablespoons of oil to the pan.
- Add 600g of thinly sliced flank steak in a single layer, season with salt and pepper, and stir-fry for 3–4 minutes per side or until nicely browned and just cooked through.
- Return the cooked broccoli, ginger, and garlic to the pan and stir-fry for another 2 minutes until everything is warmed through.
- Pour the prepared stir fry sauce into the pan and stir to coat evenly, cooking for about 30 seconds.
- Add the cornstarch slurry (1 tablespoon of cornstarch mixed with 1 tablespoon of water) and bring to a boil. Cook for another minute or until the sauce thickens slightly and coats everything nicely.
- Serve hot with steamed rice and garnish with spring onion if desired.
