This is a super high protein meal that hits all the right spots. It's a little sweet, a little spicy with all the right creamy and crunchy textures. Ingredients include chicken, hot honey sauce, slaw, chipotle lime protein crema, and optional toppings such as avocado, sesame seeds, and extra herbs.

Baja Hot Honey Chicken Bowl

Ingredients

  • 0.25 cup sugar-free honey
  • 2 tbsp sriracha
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 0.25 cup sugar-free honey
  • 2 tbsp sriracha

  • 1 tbsp soy sauce
  • 1 lb cooked chicken
  • 1 lb cooked chicken
  • 1 batch hot honey sauce
  • 1 cup shredded green cabbage
  • 0.5 red onion
  • 0.25 cup cilantro
  • 0.5 cup Greek yogurt
  • 2 tbsp mayo
  • 2 limes lime juice
  • 0.5 tbsp chili lime seasoning
  • 0.5 tsp chipotle powder
  • 1 to taste salt and pepper
  • 0.5 batch chipotle lime protein crema
  • 1 batch slaw
  • 1 bag Kaizen rice
  • 8 oz cooked rice
  • 1 batch hot honey chicken
  • 1 batch slaw
  • 1 avocado
  • 0.5 batch chipotle lime protein crema
  • 1 tbsp sesame seeds
  • 0.25 cup cilantro

Instructions

  1. Prepare the hot honey sauce by adding 1/4 cup of sugar-free honey, 2 tbsp of sriracha, 1 tbsp of rice vinegar, and 1 tbsp of soy sauce to a pan. Set the heat to low.
  2. Stir the hot honey sauce mixture for about 1 minute until the ingredients are fully combined.
  3. Dice the cooked chicken into bite-sized pieces.
  4. Add the diced chicken to the hot honey sauce in the pan and toss until the chicken is fully coated.
  5. Prepare the slaw by combining 1 cup of shredded green cabbage, 1/2 red onion thinly sliced, and a handful of chopped cilantro in a mixing bowl.
  6. In a separate bowl, blend together 1/2 cup thick Greek yogurt, 2 tbsp mayo, juice from 2 limes, 1/2 tbsp chili lime seasoning, and 1/2 tsp chipotle powder. Season to taste with salt and pepper.
  7. Mix half of the crema with the prepared slaw until well combined.
  8. Cook your chosen rice (Kaizen, quinoa, or cauliflower rice) according to the packaging instructions or until tender.
  9. Assemble your bowl by adding a serving of rice at the base, then layer with hot honey chicken, slaw, and slices of avocado.
  10. Drizzle the additional crema over the assembled bowl and garnish with sesame seeds and additional cilantro or green onions as desired.
  11. Serve immediately and enjoy your Baja Hot Honey Chicken Bowl.
