Marinated Heirloom Tomato Ricotta Toast

Ingredients

  • 2 cups heirloom tomatoes diced
  • 1 shallot diced
  • 2 tablespoons olive oil
  • 1 tablespoon vincotto vinegar or use balsamic vinegar
  • 0.5 cup basil fresh leaves
  • 1 tablespoon olive oil
  • 4 slices bread slices
  • 2 tablespoons olive oil infused with basil
  • 1 cup ricotta cheese
  • 0 maldon salt to taste
  • 0 black pepper freshly cracked

Instructions

  1. Dice the heirloom tomatoes and shallot. In a bowl, combine them with olive oil and vincotto vinegar.
  2. Let the tomato mixture marinate on a flat tray to avoid smushing.
  3. Fry fresh basil leaves in a small amount of olive oil until crispy.
  4. Add more olive oil to the pan and toast the bread slices in the infused basil oil.
  5. Spread fresh ricotta cheese onto each toasted bread slice evenly.
  6. Top the toast with marinated tomatoes, the collected juices, and fried basil.
  7. Season with maldon salt and freshly cracked black pepper before serving.
