Summer Corn Salad

This summer corn salad is one of my family's favorite summertime side dishes. It's so simple yet loaded with flavor. It's got fresh corn, tomatoes, onion, and cilantro, all tossed in lime juice and seasoned with salt and pepper. Top with avocado right before serving. It's quick, refreshing, and perfect for potlucks and barbecues.

Summer Corn Salad

Ingredients

  • 4 ears corn fresh, boiled and cut off the cob
  • 2 cups tomatoes chopped
  • 0.5 cup onion chopped
  • 0.25 cup cilantro chopped
  • 2 tablespoons lime juice
  • 0 salt to taste
  • 0 pepper to taste
  • 1 unit avocado diced

Instructions

  1. Boil fresh corn for 5-7 minutes, then cool and cut the kernels off the cob.
  2. Chop the tomatoes, onion, and cilantro.
  3. In a large bowl, combine the corn, tomatoes, onion, and cilantro. Add lime juice, then season with salt and pepper to taste. Toss everything together.
  4. Top the salad with freshly diced avocado right before serving.
