Stracciatella Tomato Gnocchi

Ingredients

  • 1 lb gnocchi
  • 1 pinch salt
  • 2 tbsp olive oil
  • 1 tbsp olive oil
  • 12 oz cherry tomatoes
  • 12 oz chicken sausage
  • 8 oz stracciatella
  • 2 tbsp hot honey

Instructions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add 1 lb of tomato-stuffed gnocchi to the boiling water and cook according to the package instructions, typically about 2-3 minutes, until they float to the surface.
  3. Using a slotted spoon, transfer the gnocchi to a plate and set aside.
  4. In a large pan, heat 2 tablespoons of olive oil over medium heat until shimmering.
  5. Add the cooked gnocchi to the pan and sauté them until golden brown on all sides, about 5-7 minutes.
  6. Remove the gnocchi from the pan and set them aside on a plate.
  7. Add an additional tablespoon of olive oil to the pan.
  8. Add 12 oz of cherry tomatoes and 12 oz of chopped chicken sausage to the pan.
  9. Cook the mixture, stirring occasionally, until the sausage is browned and the tomatoes are blistering and beginning to burst, about 8-10 minutes.
  10. Return the sautéed gnocchi to the pan and stir to combine with the sausage and tomatoes.
  11. Add 8 oz of stracciatella to the pan, stirring gently to incorporate the cheese evenly throughout the dish.
  12. Drizzle the dish with hot honey to taste, adjusting the sweetness to your preference.
  13. Serve immediately while hot and enjoy.
