Stracciatella Tomato Gnocchi

Ingredients
- 1 lb gnocchi
- 1 pinch salt
- 2 tbsp olive oil
- 1 tbsp olive oil
- 12 oz cherry tomatoes
- 12 oz chicken sausage
- 8 oz stracciatella
- 2 tbsp hot honey
Instructions
- Bring a large pot of salted water to a boil over high heat.
- Add 1 lb of tomato-stuffed gnocchi to the boiling water and cook according to the package instructions, typically about 2-3 minutes, until they float to the surface.
- Using a slotted spoon, transfer the gnocchi to a plate and set aside.
- In a large pan, heat 2 tablespoons of olive oil over medium heat until shimmering.
- Add the cooked gnocchi to the pan and sauté them until golden brown on all sides, about 5-7 minutes.
- Remove the gnocchi from the pan and set them aside on a plate.
- Add an additional tablespoon of olive oil to the pan.
- Add 12 oz of cherry tomatoes and 12 oz of chopped chicken sausage to the pan.
- Cook the mixture, stirring occasionally, until the sausage is browned and the tomatoes are blistering and beginning to burst, about 8-10 minutes.
- Return the sautéed gnocchi to the pan and stir to combine with the sausage and tomatoes.
- Add 8 oz of stracciatella to the pan, stirring gently to incorporate the cheese evenly throughout the dish.
- Drizzle the dish with hot honey to taste, adjusting the sweetness to your preference.
- Serve immediately while hot and enjoy.
