Chicken Shawarma With Creamy Garlic Sauce

Cook time: 45 minutes

Servings: 4

Ingredients

  • 0.5 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 pinch salt
  • 0.25 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon turmeric
  • 0.25 teaspoon cinnamon
  • 1 pound chicken thighs
  • 4 pieces pita bread
  • 1 whole cucumber
  • 1 whole tomato

Instructions

  1. In a small bowl, combine 1/2 cup plain Greek yogurt, 2 tablespoons mayonnaise, 3-4 cloves minced garlic, 1 tablespoon lemon juice, 1 tablespoon olive oil, and 1 teaspoon paprika. Add a pinch of salt to taste.
  2. Cover the bowl with plastic wrap and place it in the refrigerator to chill while preparing the chicken.
  3. In a large bowl, combine 1/4 cup olive oil, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon turmeric, and 1/4 teaspoon cinnamon. Mix well.
  4. Add 1 pound of skinless, boneless chicken thighs to the marinade. Turn the chicken to coat evenly. Cover and marinate in the refrigerator for at least 20 minutes, preferably 2 hours or overnight.
  5. Preheat your oven or air fryer to 400°F (200°C).
  6. Place the marinated chicken thighs on a baking sheet or in the air fryer basket. Cook for 25 minutes, flipping the chicken halfway through the cooking time.
  7. Remove the chicken from the oven or air fryer and let rest on a cutting board for 5 minutes.
  8. After resting, slice the chicken thighs into thin strips.
  9. Warm the pita bread on a grill or in a skillet over medium heat until slightly toasted.
  10. Prepare the tomato cucumber slaw by thinly slicing 1 cucumber and dicing 1 tomato. Toss them together in a bowl.
  11. To assemble, place the grilled pita on a plate, add a scoop of tomato cucumber slaw, followed by a portion of sliced chicken, and top with a generous dollop of creamy garlic sauce.
