Sweet Chilli Salmon & Feta Pasta

Ingredients
- 1 pinch salt
- 150 g pasta
- 2 fillets boneless salmon fillets
- 0.5 tsp paprika
- 0.5 tsp chilli powder
- 1 pinch salt
- 1 pinch pepper
- 2 fillets boneless salmon fillets
- 50 g cream cheese
- 30 g mayonnaise
- 30 g sweet chilli sauce
- 10 g clear honey
- 0.5 tsp onion granules
- 0.5 tsp garlic powder
- 0.5 tsp mixed herbs
- 150 g pasta
- 1 portion sauce mixture
- 2 fillets boneless salmon fillets
- 20 g feta cheese
- 1 handful rocket leaves
Instructions
- Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat.
- Add 150g of pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, preheat a non-stick skillet over medium heat.
- Season 2 boneless salmon fillets with a pinch of salt, pepper, 1/2 tsp paprika, and 1/2 tsp chili powder.
- Place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy.
- Flip the salmon fillets and cook for an additional 3-4 minutes until the flesh is opaque and cooked through.
- Remove the salmon fillets from the skillet and set them aside to cool slightly.
- In a small mixing bowl, combine 50g cream cheese, 30g mayonnaise, 30g sweet chilli sauce, 10g clear honey, 1/2 tsp onion granules, 1/2 tsp garlic powder, and 1/2 tsp mixed herbs. Stir until smooth.
- Drain the cooked pasta and return it to the pot.
- Add the sauce mixture to the pasta and toss until the pasta is well coated.
- Flake the cooked salmon into large chunks and gently fold it into the pasta.
- Sprinkle 20g of crumbled feta cheese and a handful of rocket leaves over the pasta before serving.
