Greek Smash Tacos

Ingredients

  • 0.75 cup Greek yogurt
  • 2 tsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic grated
  • 2 tbsp fresh dill chopped
  • 0.25 tsp salt
  • 1 tbsp fresh mint chopped finely, optional
  • 1.5 cups cucumber diced
  • 1.5 cup cherry tomatoes quartered
  • 0.33 cup red onion diced
  • 0.5 cup feta cheese crumbled
  • 0 to taste olive oil
  • 0 to taste salt
  • 0 to taste pepper
  • 1 lb ground turkey
  • 2 tsp garlic powder
  • 1 tsp oregano
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0 for cooking olive oil
  • 6 pieces corn or flour tortillas

Instructions

  1. Make the Tzatziki. In a small bowl, combine Greek yogurt, olive oil, lemon juice, grated garlic, fresh dill, salt, and optionally, fresh mint. Mix well and refrigerate until ready to use.
  2. In a medium bowl, mix the diced cucumber, quartered cherry tomatoes, diced red onion, and crumbled feta cheese. Drizzle with olive oil and season with salt and pepper to taste. Mix to combine.
  3. In a large bowl, mix ground turkey with garlic powder, oregano, salt, and pepper. Divide the mixture into 6 equal portions and shape each into a ball.
  4. Heat a skillet or griddle with olive oil over medium-high heat. Press one turkey portion on a tortilla and then press it down onto the skillet. Cook for 4-6 minutes until the turkey is browned and cooked through. Flip the tortilla and cook an additional 2-3 minutes until the tortilla is crisped.
  5. Serve each turkey patty taco topped with a spoonful of the tomato cucumber salad and a dollop of prepared tzatziki sauce.
