Roasted Red Pepper & Farmers Cheese Pasta Salad
A refreshing pasta salad with roasted red peppers, farmers cheese, fresh basil, and a tangy balsamic vinaigrette, perfect for summer BBQs.

Ingredients
- 1 tablespoon minced garlic
- 4 tablespoons balsamic vinegar
- 4 tablespoons olive oil
- 0.5 teaspoon honey
- 0 salt to taste
- 5 whole red bell peppers cut in half & deseeded
- 2 tablespoons olive oil
- 1 box rigatoni
- 0.5 whole red onion thinly sliced
- 1 handful basil leaves thinly sliced
- 8 ounces probiotic farmers cheese @lifewaykefir
- 0.5 handful basil leaves for garnish
- 2 ounces probiotic farmers cheese optional, for garnish
Instructions
- Add all dressing ingredients to a blender and mix until fully combined. Set aside.
- Preheat oven to 425°F. Add peppers face down to a greased baking sheet and drizzle with olive oil. Bake for about 20-25 minutes. Let cool, then slice.
- Cook the rigatoni according to the package instructions. Drain and set aside.
- Combine cooked pasta, sliced roasted red peppers, thinly sliced red onion, and sliced basil leaves in a large bowl.
- Add the dressing to the pasta mixture and toss until everything is well coated. Top with probiotic farmers cheese.
- Top with more fresh basil and additional cheese if desired before serving.
