Barbecue Ranch Enchiladas
Quick and flavorful barbecue ranch enchiladas that are perfect for a family dinner. Simple ingredients, easy assembly, and great for meal preps make this a family favorite.

Ingredients
- 5 cups rotisserie chicken chopped
- 15 oz baked beans drained
- 0.5 cup corn drained and rinsed
- 4 oz green chiles
- 1 cup Mexican blend cheese shredded
- 1 tbsp BBQ seasoning
- 0 salt
- 0 black pepper
- 12 flour tortillas
- 0 avocado oil
- 0.5 cup BBQ sauce
- 0 ranch dressing
- 1 cup Mexican blend cheese shredded
- 0 cilantro
- 0 red onion
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine chopped rotisserie chicken, baked beans, corn, green chiles, 1 cup shredded cheese, BBQ seasoning, salt, and pepper. Toss well to combine.
- Assemble the enchiladas: Lay a tortilla flat, scoop a large spoonful of the chicken mixture into the center, roll up the tortilla, and place it seam side down in a baking dish.
- Spray the tortillas with a bit of oil, drizzle BBQ sauce over the top, and brush to coat. Then drizzle ranch dressing over the top.
- Place in the oven to bake for 15 minutes. Then remove, top with additional cheese, and return to the oven for another 15 minutes or until the cheese is melted and slightly crispy.
- Top with fresh cilantro and diced red onion before serving.
