Low-Fat High-Protein Chocolate Mousse

Ingredients

  • 450 g cottage cheese strained, use Lincoln brand with 4% fat if possible
  • 6 tbsp cocoa powder
  • 4 tbsp monkfruit sweetener or substitute with maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp greek yogurt for serving
  • 0 raspberries for garnish
  • 1 tbsp dark chocolate grated, for garnish

Instructions

  1. Strain and measure out 450g of cottage cheese to ensure you have the right consistency for blending.
  2. Add 6 tablespoons of cocoa powder to the blender.
  3. Add 4 tablespoons of monkfruit sweetener or maple syrup to the blender according to your taste preference.
  4. Add 1 teaspoon of vanilla extract to enhance the flavors.
  5. Blend all ingredients in a blender until the mixture is smooth and creamy.
  6. Distribute the mousse evenly into 4 small cups and refrigerate for at least 2 hours.
  7. Before serving, top each mousse with a dollop of Greek yogurt, a few raspberries, and a sprinkle of grated dark chocolate, if desired.
