Summer Peach & Feta Corn Salad

Ingredients

  • 3 ears corn
  • 1 tbsp olive oil
  • 0 salt to taste
  • 0 black pepper to taste
  • 2 large peaches diced
  • 2 Persian cucumbers diced
  • 1 red pepper diced
  • 1 small shallot minced
  • 0.25 cup green onions
  • 0.25 cup cilantro
  • 1 avocado diced
  • 4 oz feta cheese crumbled
  • 1 lime juiced
  • 0.5 lemon juiced
  • 0.25 tsp cumin
  • 0.25 cup olive oil
  • 0 salt to taste
  • 0 black pepper to taste

Instructions

  1. Shuck the corn and rub with olive oil, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Place the corn in the skillet and cook undisturbed for 3-4 minutes on each side until charred.
  3. Remove the corn from the skillet and let it cool. Once cooled, use a sharp knife to slide the kernels off each cob.
  4. In a large bowl, combine the corn, diced peaches, cucumbers, red pepper, shallot, green onions, cilantro, avocado, and crumbled feta.
  5. Make the dressing by combining the juice of 1 lime, juice of half a lemon, cumin, and olive oil in a small bowl. Add salt and pepper to taste.
  6. Pour the dressing over the salad and toss to combine.
  7. Before serving, season with salt and pepper to taste.
