Summer Peach & Feta Corn Salad
A refreshing summer salad featuring sweet peaches, charred corn, salty feta, and a zesty lime-lemon dressing. Perfect as a salad or a dip for chips, ideal for meal prep.

Ingredients
- 3 ears corn
- 1 tbsp olive oil
- 0 salt to taste
- 0 black pepper to taste
- 2 large peaches diced
- 2 Persian cucumbers diced
- 1 red pepper diced
- 1 small shallot minced
- 0.25 cup green onions
- 0.25 cup cilantro
- 1 avocado diced
- 4 oz feta cheese crumbled
- 1 lime juiced
- 0.5 lemon juiced
- 0.25 tsp cumin
- 0.25 cup olive oil
- 0 salt to taste
- 0 black pepper to taste
Instructions
- Shuck the corn and rub with olive oil, salt, and pepper.
- Heat a large skillet over medium-high heat. Place the corn in the skillet and cook undisturbed for 3-4 minutes on each side until charred.
- Remove the corn from the skillet and let it cool. Once cooled, use a sharp knife to slide the kernels off each cob.
- In a large bowl, combine the corn, diced peaches, cucumbers, red pepper, shallot, green onions, cilantro, avocado, and crumbled feta.
- Make the dressing by combining the juice of 1 lime, juice of half a lemon, cumin, and olive oil in a small bowl. Add salt and pepper to taste.
- Pour the dressing over the salad and toss to combine.
- Before serving, season with salt and pepper to taste.
