Ingredients
- 1 lb chicken breasts sliced into slider-sized pieces
- 0 salt to taste
- 0 black pepper to taste
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs Italian seasoned or panko
- 0.5 cup Parmesan cheese grated
- 0 olive oil for frying
- 12 slider buns Hawaiian rolls work well for a slightly sweet contrast
- 0.5 cup marinara sauce
- 8 slices mozzarella cheese or about 1 cup shredded
- 2 tbsp butter melted
- 1 tsp garlic powder
- 1 tsp dried parsley optional for garnish
- 0 marinara sauce extra for serving
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken slices with salt, pepper, garlic powder, and Italian seasoning.
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese. Dredge each chicken piece in flour, dip into the beaten eggs, and coat in the breadcrumb mixture.
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom. Fry the breaded chicken pieces in batches, cooking each side for 3-4 minutes until golden brown and cooked through.
- Transfer the fried chicken pieces to a paper towel-lined plate to drain excess oil.
- Slice the slider buns in half and place the bottom halves in a baking dish or on a baking sheet. Place a piece of fried chicken on each bun bottom. Spoon a tablespoon of marinara sauce over each chicken piece, then top each with a slice of mozzarella cheese. Place the top halves of the buns on top.
- In a small bowl, mix the melted butter with garlic powder and dried parsley. Brush the tops of the buns with the garlic butter mixture.
- Cover the baking dish with foil and bake in the preheated oven for 10 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and the buns are golden brown.
- Remove the sliders from the oven and let them cool slightly before serving. Serve with extra marinara sauce on the side for dipping.
