Ingredients

  • 1 large bag tortilla chips
  • 1 cup cooked ground beef
  • 1 teaspoon taco seasoning optional
  • 0.5 cup black beans drained and rinsed
  • 0.5 cup corn kernels
  • 0.5 cup diced tomatoes
  • 0.25 cup jalapeños sliced
  • 0.25 cup black olives sliced, optional
  • 0.25 cup red onion chopped
  • 2 cups shredded cheese
  • 2 avocados diced or mashed
  • 0.25 cup sour cream
  • 0 cilantro chopped
  • 0 lime wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spread the tortilla chips evenly across a large, oven-safe platter or baking sheet. You can layer them slightly to ensure all chips get some toppings.
  3. If using ground beef, chicken, or pork, sprinkle the cooked meat evenly over the chips. If you’re using ground beef, you can season it with taco seasoning while cooking for extra flavor.
  4. Sprinkle the black beans, corn, diced tomatoes, jalapeños, black olives, and red onion over the chips and meat.
  5. Generously sprinkle the shredded cheese over the entire platter, ensuring it covers the toppings well.
  6. Place the nachos in the oven and bake for 10-15 minutes, or until the cheese is fully melted and bubbly. Keep an eye on them to make sure they don’t burn.
  7. Remove the nachos from the oven and let them cool slightly. Top with diced or mashed avocado (or guacamole), dollops of sour cream or Greek yogurt, and a sprinkle of fresh cilantro.
  8. Serve your nachos immediately with lime wedges on the side for squeezing over the top.
