Citrus Herb Grilled Salmon With Avocado Tomato Salsa

Ingredients
- 2 tablespoons olive oil
- 1 zest and juice lemon
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 4 pieces salmon fillets
- 0 to taste salt
- 0 to taste black pepper
- 2 ripe avocados
- 2 medium tomatoes
- 1 small red onion
- 1 juice lime
- 1 tablespoon cilantro
- 0 to taste salt
- 4 optional lime wedges
Instructions
- Preheat your grill to medium-high heat, around 400°F (200°C).
- In a small bowl, mix 2 tablespoons of olive oil, the zest and juice of 1 lemon, 1 teaspoon of fresh chopped thyme, and 1 teaspoon of fresh chopped rosemary.
- Brush the lemon-herb mixture over 4 salmon fillets (about 6 oz each), ensuring even coverage.
- Season the salmon with salt and pepper to taste.
- Place the salmon fillets skin-side down on the grill and cook for 6-8 minutes, until the skin is crispy and the salmon is opaque.
- Flip the salmon using a wide spatula and cook for an additional 2-3 minutes on the other side.
- Meanwhile, dice 2 ripe avocados and 2 medium tomatoes, and finely chop 1 small red onion. Combine them in a mixing bowl.
- Add the juice of 1 lime, 1 tablespoon of chopped fresh cilantro, and salt to taste to the avocado mixture. Gently fold to combine.
- Remove the salmon from the grill and let it rest for 2 minutes to retain its juices.
- Plate each salmon fillet with a generous scoop of avocado tomato salsa on top. Garnish with lime wedges if desired.
