Greek Chicken Pasta Salad

Ingredients

  • 1 pound chicken thighs
  • 0.25 cup lemon juice
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 8 ounces pasta
  • 1 medium cucumber
  • 1 medium bell pepper
  • 1 cup tomatoes
  • 0.5 cup Kalamata olives
  • 0.25 cup parsley
  • 0.25 cup lemon juice
  • 0.25 cup olive oil
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.5 cup feta cheese

Instructions

  1. Marinate the chicken thighs in a mixture of lemon juice, garlic, and olive oil for at least 30 minutes.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Chop the cucumber, bell pepper, and tomatoes into bite-sized pieces.
