Healthy Shrimp Tacos With Cilantro Lime Greek Yogurt Slaw

Ingredients
- 0.5 Red Onion
- 0.5 cup Distilled White Vinegar
- 0.5 cup Water
- 1 tbsp Sugar
- 1 tsp Kosher Salt
- 1 Sliced Red Onion
- 3 tbsp Fresh Cilantro
- 1 clove Garlic
- 0.75 cup Plain Greek Yogurt
- 0.25 cup Light Sour Cream
- 2 Limes
- 2 tbsp Water
- 0.25 tsp Salt
- 3 cups Red Cabbage
- 1 lb Large Shrimp
- 1.5 tsp Chili Powder
- 1.5 tsp Cumin
- 0.5 tsp Garlic Powder
- 1 tsp Kosher Salt
- 1 tbsp Olive Oil
- 8 Cassava Flour Tortillas
- 1 Avocado
- 0.5 Jalapeño
Instructions
- Slice 1/2 of a red onion into thin strips using a sharp knife.
- In a small pot, combine 1/2 cup distilled white vinegar, 1/2 cup water, 1 tbsp sugar, and 1 tsp kosher salt. Bring to a gentle boil over high heat.
- Carefully pour the hot pickling liquid over the sliced onions in a heat-safe bowl. Let sit at room temperature.
- Finely chop 3 tbsp fresh cilantro and mince 1 clove of garlic.
- In a large bowl, mix 3/4 cup plain Greek yogurt, 1/4 cup light sour cream, chopped cilantro, minced garlic, 1-2 limes' juice, 2 tbsp water, and 1/4 tsp salt until well combined. Set aside 1/4 cup of this sauce for topping.
- Mix the remaining sauce with 3 cups thinly sliced red cabbage and set aside.
- In a bowl, toss 1 lb of peeled and deveined large shrimp with 1.5 tsp chili powder, 1.5 tsp cumin, 0.5 tsp garlic powder, and 1 tsp kosher salt.
- Heat 1 tbsp olive oil in a large pan over medium-high heat. Add the shrimp and sear for 1-2 minutes on each side until pink and opaque. Internal temperature should reach 145°F.
- Preheat a clean pan over medium-high heat. Toast each cassava flour tortilla for about 30 seconds on each side until golden brown spots appear.
- Slice 1 avocado and dice 1/2 jalapeño for garnish.
- Assemble tacos by layering slaw, shrimp, pickled onions, diced jalapeños, avocado slices, and a drizzle of reserved sauce on each toasted tortilla. Serve immediately and enjoy.
