Chocolate Chip Zucchini Bread

Ingredients

  • 1 medium zucchini
  • 1 cup zucchini
  • 0.33 cup granulated sugar
  • 0.5 cup maple syrup
  • 0.5 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a loaf tin with parchment paper, leaving an overhang on both sides.
  3. Grate 1 medium zucchini to yield about 1 cup.
  4. Using a clean kitchen towel, squeeze out as much water as possible from the grated zucchini.
  5. In a large mixing bowl, combine 1/3 cup granulated sugar, 1/2 cup maple syrup, and 1/2 cup melted unsalted butter.
  6. Add 1 large egg and 1 teaspoon vanilla extract to the sugar mixture and whisk until smooth.
  7. Add 1/2 cup milk to the wet mixture and whisk again until incorporated.
  8. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon salt.
  9. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  10. Fold in 1 cup of chocolate chips.
  11. Transfer the batter to the prepared loaf tin and smooth the top with a spatula.
  12. Bake in the preheated oven for 60 minutes, or until a knife inserted into the center of the bread comes out clean.
  13. Allow to cool in the pan for 10 minutes, then use the parchment overhang to lift the bread out of the pan and transfer it to a wire rack to cool completely.
