Chocolate Chip Zucchini Bread

Ingredients
- 1 medium zucchini
- 1 cup zucchini
- 0.33 cup granulated sugar
- 0.5 cup maple syrup
- 0.5 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 0.5 cup milk
- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 0.5 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line a loaf tin with parchment paper, leaving an overhang on both sides.
- Grate 1 medium zucchini to yield about 1 cup.
- Using a clean kitchen towel, squeeze out as much water as possible from the grated zucchini.
- In a large mixing bowl, combine 1/3 cup granulated sugar, 1/2 cup maple syrup, and 1/2 cup melted unsalted butter.
- Add 1 large egg and 1 teaspoon vanilla extract to the sugar mixture and whisk until smooth.
- Add 1/2 cup milk to the wet mixture and whisk again until incorporated.
- In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Fold in 1 cup of chocolate chips.
- Transfer the batter to the prepared loaf tin and smooth the top with a spatula.
- Bake in the preheated oven for 60 minutes, or until a knife inserted into the center of the bread comes out clean.
- Allow to cool in the pan for 10 minutes, then use the parchment overhang to lift the bread out of the pan and transfer it to a wire rack to cool completely.
