Best Grilled Cheese Burrito (Taco Bell Dupe)

Ingredients

  • 1 cup cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 4 large flour tortillas
  • 0.5 cup refried beans
  • 1 cup cooked rice
  • 1 cup shredded cheese

Instructions

  1. Grate 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese and mix together in a bowl.
  2. Cook 1 pound of ground beef in a skillet over medium-high heat until browned and cooked through, about 6-8 minutes.
  3. Drain excess fat from the ground beef and add 2 tablespoons of taco seasoning. Stir to combine and cook for another 2 minutes.
  4. Warm 4 large flour tortillas in a dry skillet over medium heat for about 15 seconds on each side.
  5. Spread a thin layer of refried beans, about 2 tablespoons, on each tortilla.
  6. Layer the cooked ground beef mixture, 1/4 cup cooked rice, and 1/4 cup shredded cheese on each tortilla.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from bottom to top.
  8. Heat a large skillet over medium heat and place the burritos seam-side down to secure them. Cook each for 3-4 minutes on each side until golden brown.
  9. Sprinkle additional cheese on top of the burritos, cover, and let the cheese melt, about 2 minutes.
  10. Serve immediately with salsa or your favorite toppings.
