Cozy Peaches And Cream Stovetop Oatmeal

Ingredients
- 1 whole peach
- 1 tablespoon maple syrup
- 0.25 teaspoon vanilla bean paste or extract
- 0.25 teaspoon cinnamon
- 0.33 cup rolled oats
- 0.0625 teaspoon salt
- 0.67 cup milk of choice
- 0.33 cup water
- 2 tablespoons yogurt
- 2 crackers sweet thins
Instructions
- Wash and dry one peach. Use a sharp knife to chop it into small, bite-sized pieces.
- In a medium saucepan, combine the chopped peach, 1 tablespoon of maple syrup, 1/4 teaspoon of vanilla bean paste or extract, and 1/4 teaspoon of cinnamon.
- Heat the saucepan over medium heat, stirring occasionally, until the peaches are soft and juicy, around 5 minutes.
- Transfer 1/3 of the cooked peaches to a small bowl and set aside for topping.
- To the saucepan with the remaining peaches, add 1/3 cup of rolled oats, a pinch of salt, 2/3 cup of milk of your choice, and 1/3 cup of water. Stir to combine.
- Continue to cook over medium heat, stirring occasionally, until the oats are thick and creamy, about 5-7 minutes.
- Transfer the cooked oatmeal into a serving bowl and top with a scoop of yogurt, the reserved cooked peaches, and some crushed up sweet thins.
