Ingredients
- 16 oz chicken breasts
- 0.75 tsp garlic powder
- 1 tsp lemon pepper seasoning
- 2 tbsp olive oil or butter
- 3 cloves garlic
- 16 oz chicken cutlets
- 0.5 cup chicken or vegetable broth
- 1 tbsp lemon juice
- 1 cup heavy cream or plant-based cream
- 1 lb potato gnocchi
- 0.33 cup parmesan cheese
- 3 cups spinach
Instructions
- Using a sharp knife, cut the chicken breasts in half lengthwise to create thin cutlets.
- Season each side of the chicken cutlets with garlic powder and lemon pepper seasoning.
- Add olive oil and butter to a large skillet over medium-high heat until the butter is melted and the oil is shimmering.
- Add minced garlic to the skillet and sauté for 2-3 minutes until fragrant.
- Place the seasoned chicken cutlets in the skillet and sear for 5 minutes on each side until golden and cooked through.
- Transfer the cooked chicken to a plate and cover to keep warm.
- Deglaze the pan with chicken or vegetable broth and add lemon juice, stirring to combine.
- Add heavy cream and potato gnocchi to the skillet. Stir to ensure the gnocchi is covered in sauce.
- Let the sauce simmer uncovered for 5-7 minutes, stirring occasionally, until it thickens.
- Remove the pan from heat and add grated Parmesan cheese and fresh spinach. Toss to combine until the spinach is wilted.
- Place the chicken cutlets back into the skillet, nestled among the gnocchi and spinach. Serve immediately.
