Cheezit Tortellini Caesar Salad

Ingredients
- 2 heads romaine lettuce
- 9 oz cheese tortellini
- 4 tablespoons olive oil
- 3.5 inches anchovy paste
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 0.5 teaspoon hot sauce
- 1 clove garlic clove
- 1.25 cups mayonnaise
- 1 whole lemon
- 3.5 tablespoons Parmesan cheese
- 1.5 cups Cheezits
- 2 heads romaine lettuce
- 9 oz cheese tortellini
- 1 batch Caesar dressing
- 1 optional Parmesan cheese
- 1.5 cups Cheezits
Instructions
- Wash and dry 2 heads of romaine lettuce thoroughly. Chop the romaine into bite-sized pieces.
- Cook 9 oz cheese tortellini according to package instructions. Drain and cool.
- Whisk 4 tablespoons of olive oil, 3-4 inches of anchovy paste, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon hot sauce in a large bowl.
- Add 1 clove grated garlic, 1 1/4 cups mayonnaise, juice of 1 lemon, and 3-4 tablespoons grated Parmesan to the dressing mixture. Mix well.
- Refrigerate the dressing for at least 10 minutes to allow the flavors to meld together.
- Crush 1 1/2 cups of Cheezits in a food processor until they form coarse crumbs.
- In a large serving bowl, combine the chopped romaine, cooled tortellini, and the prepared Caesar dressing. Toss to coat evenly.
- Grate additional Parmesan cheese over the top of the salad, if desired.
- Sprinkle the crushed Cheezits generously over the salad just before serving.
