Maple-Glazed Carrots with Pecans
This delightful side dish combines the natural sweetness of roasted carrots with a rich maple glaze and a crunchy pecan topping. Perfect with a variety of main dishes, the addition of fresh parsley as an optional garnish makes this dish as elegant as it is flavorful.

Ingredients
- 1 pound carrots peeled and cut into 1/4-inch slices
- 2 tablespoons olive oil
- 0 salt to taste
- 0 black pepper to taste
- 0.25 cup maple syrup
- 1 tablespoon butter
- 1 teaspoon ground cinnamon
- 0.25 teaspoon ground nutmeg
- 0.25 cup pecans roughly chopped
- 0 fresh parsley chopped, optional
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the carrot slices with olive oil, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet. Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, tossing once halfway through.
- While the carrots are roasting, combine maple syrup, butter, cinnamon, and nutmeg in a small saucepan over medium heat. Stir until the butter is melted and the glaze is well combined. Allow it to simmer for a few minutes until it slightly thickens.
- Once the carrots are done roasting, remove them from the oven. Drizzle the maple glaze over the carrots and toss to coat them evenly. Sprinkle the chopped pecans over the top.
- Garnish with chopped fresh parsley if desired, and serve immediately.
