Cottage Cheese Pancakes

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 bowl all-purpose flour mix
  • 1 bowl cottage cheese mixture
  • 1 tablespoon butter
  • 1 pancake pancake batter
  • 1 pancake pancakes
  • 1 plate pancakes

Instructions

  1. In a large mixing bowl, combine 1 cup of cottage cheese, 2 eggs, and 1 tablespoon of vanilla extract. Mix until well combined.
  2. In a separate bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, and a pinch of salt until evenly blended.
  3. Gradually fold the dry flour mixture into the wet cottage cheese mixture until just combined. Avoid overmixing to keep the batter light.
  4. Heat a large nonstick skillet over medium heat. Grease lightly with butter once hot.
  5. Scoop 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges are set, about 2-3 minutes.
  6. Flip the pancakes and cook until the other side is golden brown and cooked through, another 2-3 minutes.
  7. Transfer cooked pancakes to a plate and cover with a lid or foil. Steam for 5 minutes to enhance fluffiness.
  8. Serve the pancakes warm with a topping of your choice, such as syrup, fresh fruits, or additional cottage cheese.
