Cottage Cheese Pancakes
Inspired by Arthur's syrniki, these cottage cheese pancakes are incredibly fluffy and moist, achieved by an end-stage steaming process. Experience breakfast perfection with these delightful pancakes.

Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 0.25 teaspoon salt
- 1 bowl all-purpose flour mix
- 1 bowl cottage cheese mixture
- 1 tablespoon butter
- 1 pancake pancake batter
- 1 pancake pancakes
- 1 plate pancakes
Instructions
- In a large mixing bowl, combine 1 cup of cottage cheese, 2 eggs, and 1 tablespoon of vanilla extract. Mix until well combined.
- In a separate bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, and a pinch of salt until evenly blended.
- Gradually fold the dry flour mixture into the wet cottage cheese mixture until just combined. Avoid overmixing to keep the batter light.
- Heat a large nonstick skillet over medium heat. Grease lightly with butter once hot.
- Scoop 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges are set, about 2-3 minutes.
- Flip the pancakes and cook until the other side is golden brown and cooked through, another 2-3 minutes.
- Transfer cooked pancakes to a plate and cover with a lid or foil. Steam for 5 minutes to enhance fluffiness.
- Serve the pancakes warm with a topping of your choice, such as syrup, fresh fruits, or additional cottage cheese.
